How to grow

Direct sow or transplant — kale is not picky. For fall harvest (the sweet spot, since frost converts starches to sugars and makes it taste like candy), sow 6–8 weeks before first frost. Spring crops bolt when heat arrives, so in Florida, kale is strictly a fall-through-spring affair; summer kale is just a caterpillar buffet.

Sow 1/4–1/2 inch deep. Kale tolerates light frost easily and hardy types survive into the teens under row cover. In the far north, 'Winterbor' and 'Red Russian' are the iron athletes of the brassica world. Thin or space properly — crowded kale is an aphid Airbnb.

Water & feeding

About 1 inch per week; consistent moisture prevents tough, bitter leaves. Kale is a moderate feeder — work worm castings into the bed at planting and side-dress monthly during active growth. A 1/4-inch castings top-dress mid-season keeps leaves tender and sweet.

Common problems

  • Cabbage worms (imported cabbageworm, loopers): those velvety green caterpillars. Bt (Bacillus thuringiensis) spray is organic and surgical — kills caterpillars, spares everything else.
  • Aphids: blast with water, invite ladybugs, or spray insecticidal soap. Check leaf undersides — that's their headquarters.
  • Flea beetles: row cover on young plants; mature kale usually outgrows the damage.

Harvest

Pick outer leaves when 8–10 inches long, working bottom-up; the plant keeps producing from the center for months. After a frost or two, flavor peaks — cold-sweetened kale is a different vegetable. Leave the crown and it'll regrow; some plants produce for a full year.

Nerdy fact: Kale, cabbage, broccoli, cauliflower, Brussels sprouts, and kohlrabi are all the SAME species — Brassica oleracea. Humans took one weedy Mediterranean plant and sculpted it into six vegetables. Selective breeding is just slow sculpture.
