How to grow

Grow non-astringent types ('Fuyu,' 'Jiro') and skip the pucker entirely — they eat crisp like apples. Astringent types ('Hachiya') must be jelly-soft before eating. Persimmons are nearly pest-free in Florida and tolerate a wide range of soils, making them the low-maintenance overachiever of the home orchard.

Water & feeding

Drought-tolerant once established; water during fruit development for larger, cleaner fruit.

Common problems

  • Astringency confusion — eating a firm Hachiya is a mistake you make once
  • Fruit drop in the first bearing years; the tree is calibrating
  • Scale insects occasionally; dormant oil handles them

Harvest

Fuyu types: pick firm-ripe and eat fresh. Hachiya types: wait until completely soft and translucent — impatience is punished with tannic regret.

Nerdy fact: Persimmon comes from the Algonquian 'putchamin' — and the tannins that pucker your mouth are the same compounds used to tan leather. You're tasting the chemistry of boot-making.
