🥬 Rhubarb
How to grow
Plant crowns in early spring with buds just at the soil surface, then leave it alone to establish — harvesting year one weakens the crown permanently. Rhubarb needs winter chill and rots in Florida heat, so Southern gardeners should treat it as a fun experiment, not a plan.
Water & feeding
Steady moisture; mulch to keep roots cool.
Common problems
- Needs real winter chill — no chill, no vigor
- Crown rot in hot, wet soil
- Rhubarb curculio beetles bore into stalks
Harvest
Twist and pull stalks (don't cut) once they're a foot or more long. NEVER eat the leaves — they're loaded with oxalic acid. Stalks only, always.
